Inspiration – Heirloom Tomatoes
$110 per person; $150 with wine pairing
This month’s Open Kitchen menu at The Commissary will showcase one of California’s most prized summer fruits: heirloom tomatoes. The Commissary’s Executive Chef Rogelio Garcia will be joined by talented guest chefs Adam Ross, executive chef at Napa’s 1313 Main, formerly of The Restaurant at Meadowood and Ad Hoc; Joey Elenterio, previously of Wayfare Tavern and Michelin-starred Chez TJ; and Sujan Sarkar, executive chef of San Francisco’s Rooh to create the five-course prix-fixe menu.
Heirloom tomatoes are celebrated for their spectrum of color, size, and flavor. Known for growing over two hundred varieties of tomatoes, Tenbrink Farms is located in the Suisun Valley and is beloved by Bay Area chefs. While technically a fruit, these summer gems will shine in dishes savory and sweet.
